Ingredients:
1/2 Kilo Diced Chicken pieces cut into 1/2-inch cubes
1/2 cup plain Yogurt
Garlic paste 1 teaspoon
Red Chilli powder 1 teaspoon ( vary it as per taste)
1/2-teaspoon Cumin ( Jeera) Powder
1/4-teaspoon fresh-ground black Pepper
1 3/4 teaspoons Salt
3 tablespoons Butter
1 onion, cut into thin slices
1/4 teaspoon cardamom powder
1/4 teaspoon coriander seed powder
1/4-teaspoon turmeric
5 cloves
1 Cinnamon stick, broken in half
1 1/2 cups basmati rice or any long-grain rice
2 3/4 cups water
1/3 cup Kishmish (Raisins, Sultanas)
1/3 cup chopped cashew nuts
Garam Masala 1 teaspoon
Instructions:
1. Take a bowl and add the yoghurt , garlic, chilli powder, Cumin powder, black peper and 1/2 teaspoon salt.
2. Add the chicken pieces and stir well and let it marinate for 2 hours.
3. Take a thick bottomed pan and melt the butter over medium heat.
4. Add the sliced onions and cook until golden brown.
5. Add the cloves, cinnamon and turmeric
6. Add the rice and the remaining salt 1-1/4 teaspoons .
7.Cook and stir for about 2 minutes.
8. Add the marinated chicken mixture in the pan.
9. Add the Garam Masala and stir well for 2 minutes.
10. stir in the water and raisins. Bring to a simmer.
11. Cover and simmer until the rice and chicken are almost done in about 20 minutes or so.
12.Remove from the heat.
13. Let stand, covered, until the rice and chicken are just done, about 5 minutes.
14. Stir in the cashews.
