Garlic has some oils which are very volatile.
If you crush the garlic or use the Garlic press, the cell wall of Garlic bulb are smashed which leads to the oil reacting with its natural enzymes. This leads to the taste becoming very pungent and strong. If you use Garlic this way then it does not hold up well when heated and loses its natural flavours and becomes bitter.

When you mince or chop garlic, the oils aren't violently forced out but are left to slowly season your food as its cooks. Also, the enzymes that make garlic pungent are destroyed by heat, so the garlic flavour is more apt to mellow as it cooks.

As a rule, the more aggressively garlic is handled, the more aggressive and short-lived its flavour.
