Ingredients:
1. Eggplant or Obergein (medium size) 1
2. Green peas 1/2 cup
3. Chopped onion 1 Nos
4. Finely chopped tomatoes 1
5. Finely chopped green chilli 1
6. Red chilli powder 1/2 tsp.
7. Garam Masala Powder 1/2 tsp.
8. Turmeric Powder 1/4 tsp.
9. Vegetable oil 4 Table spoons
10. Salt to taste
11. Chopped Coriander Leaves
12 Ginger paste 1 teaspoon
Instructions:
Depending upon the availablity GAS or ELECTRICITY cooking facility this dish can be cooked differentl.
1. If using the Gas then brush eggplant with oil and roast it on a gas burner over medium heat.
If using electric cooking range, try roasting it in the Grill , brush it with oil on the outside.
Let the burnt black marks appear on the Obergeine.
You might need to rotate it occasionally to cook it fully on all sides.
2. Leave it to cool or run it under the cold water or dip it in a bowl full of water .
3. Remove any overly burnt flesh on the outside.
4. Mash the remaining flesh in a mixer.
5. Heat oil in a thick bottomed pan.
6. Start fry ing the onions on medium heat add the Ginger paste as well.
7. Add red chilly powder.
8. Add the turmeric powder.
9. Add Garam Masala powder ( Instead of adding all of these ingredients at once, it is better to add one ingredient and stir for a minute and then add the second ingredient so that the flavour can be absorbed well.
10. Add the green peas and let them cook as well for 5 minutes.
( To save time you can preboil them or microwave them for 5 minutes, so that you do not have to cook more )
11. Add the diced tomatoes and cook until tender.
12. Add the mixed flesh of the obergiene and cook for about 7 minutes, until you see the oil seperating from the mass.
13. Garnish with green coriander leaves and serve hot with Naan or Roti .
TIP: The taste of this dish will depend on tomatoes, use ample amount of tomatoes, the colour of the vegetable should be slightly reddish due to tomatoes.
