Ingredients:
Ingredients
1. Palak ( Spinach) leaves ( 1 bunch ) or Frozen Spinach ( 1box 150 gms)
2. Dahi ( Yoghurt) 1 cup
3. Saunf 1 table spoons ( coarsly grinded into powder)
4. Jeera ( Cumin Seeds) 1 tea spoon ( coarsly grinded into powder)
5. Saunth or Soondh or Dry Ginger Powder 1 teaspoon
6. Red Chilli Powder 1 teaspoon
7. Garam Masala Powder 1 tablespoon
8. Salt to taste
9. Paneer ( Cottage Cheese) you can also used fried potate cubes instead
10. Tomato puree 1/2 cup
Instructions:
This is a slight variation of the normal Palak Paneer ( Spinach with Cottage Cheese) or Aloo Palak ( Spinach with Potatoes).
This dish can be cooked quickly if you plan well.
1. If you are using fresh Spinach leaves then boil them in salted water for 5 minutes. or if you are using the frozen spinach which is already cut then microwave it for about 6 minutes. Once done put it in the blender or using hand mixer make a paste out of it.
2. Take a heavy bottomed pan and heat some oil ( say 3 Table Spoons), quickly add the Powdered Jeera, Powdered Saunf and the Garam Masala and cook it for a minute.
3. Add the chilli powder.
4. Pour all the yoghurt in the pan and let it cook it for 2 minutes.
5. Pour the tomato puree in the pan and cook it for a minutes.
6. Add the salt.
7. Add the already cooked paste of the spinach in it.
8. You would see that the spinach starts to boil over and bubbling, so cover it well otherwise your whole kitchen is going to look like a Mehndi ( Henna) covered hand. Well you would know what I mean if you made this mistake of not covering it.. :-)
9. Cook it for another 2 minutes.
10. Leave it covered till cool.
11. Add the paneer cubes in it. ( you can also used already fried potato cubes in it)
Serve it with Naan , Rice or Roti
