Well, here it is - the Punjabi Pizza
This recipe is basically the famous south Indian recipe - Uthapam.
there are slight variations .
It is for those quick snacks with tea or when the kids come home from school. This is wholesome as it contains Semolina which is good for health, and veges which are not overcooked. The idea is to leave the veges bit crunchier
Here are the ingredients
1. 1 Cup of Sooji ( Semolina)
2. 1 Cup of yoghurt ( warm it for 30 seconds in the Microwave before use)
3. Finely Chopped Capscicum ( 1 Number)
4. Finely Chopped Carrot ( 1 Number)
5. Finely Chopped Onion ( 1 Number)
6. Some Nuts ( Cashews or peanuts)
7. Oil 3 Tablespoons
8. Cornflour 1 tablespoon
9 . Salt to taste
10. Water 1 cup
11. Paneer ( Cottage Cheese ) 100 grams ( Crumble it with hands completely)
12. Finely chopped Green Chillies ( 1 Number)
Instructions:
1. Start with the Semolina , add some warmed up yohhurt and mix it .
2. In a small cup put 1 Tablespoon of cornflour and mix it with little water and mix it thorougly to remove any lumps.
3. Mix this cornflour mixture in the semolina.
4. Make sure the consistency of the mixture is bit tight ( we do not need runny mixture as it will not cook well). The right consistency is like thick cream.
5. Leave this mixture for 1/2 an hour at room temperature so for better results.( If you are in a hurry you can use it instantly as well)
6. Take a non stick fry pan an heat some oilon medium heat .
7.Pour the mixture ( please note that if the mixture has hardened up then you can add some water to bring the consistency back to like that of thick cream).
8. Pour the thinly chopped veges on top.
9. sprinkle some nuts on top.
10. Sprinkle the thinly crumbled paneer ( Cottage Cheese) on top.
11. You can carefully turn the sides after one side is done.
Eat with Chutney or tomate sauce.
