Ingredients:
1. Lamb diced into small cubes - 1 kg
2. Dry Red ChilliesWhole 4
3. Coriander Seeds 2 tablespoons
4. Cloves 8 - 8
5. Cinnamon 1 stick
6. Black pepper 1 teaspoon
7. Jeera (Cumin Seeds ) 1/2 tsp
8. Green Cardamom 3
9. Haldi (Turmeric Powder) 1/2 tsp
10. Ginger paste 1 tablespoon
11. Garlic Paste 1 teaspoon
11. Curry Leaves 10
12. Red Onions 2 Finely Sliced
13. Cooking Oil 2 tbsp
14. Salt to taste


For Garnish

Chopped Coriander 1 tablespoon
Lime Juice 1 tablespoon
Instructions:
1. Take a heavy bottomed fry pan and put the oil and put the pan on medium heat.
2. Add the Dry Red Chillies.
3. Add the Coriander Seeds.
4. Add the Cloves.
5. Add the Cinnamon Stick
6. Add the Black Peppers
7. Add the Cumin seeds
8. Add the Green Cardamoms
9. Fry all the above ingredients until they get browned..
10. Add the Garlic paste and fry for two minutes.
11. Add the Turmeric Powder.
12. Add the diced Lamb and fry.
13. Add the Ginger Paste and fry.
14. Add the curry leaves now.
15. Add the salt as per taste.
16. Add some water and let it cook for 30 - 40 minutes or so.
17. When all the water has dried up and the masala is well mixed with the lamb.
18 Keep this mixture aside.
19. Take another pan and add some oil .
20 Add the sliced onions and fry till brown.
21 Mix these fried onions with the cooked lamb.


Garnish with the chopped coriander and lime juice.

Enjoy it hot with the Naan, Roti or Rice.
