Ingredients:
Basmati Rice or Biryani Rice - 250 gms
Carrots - 100 gms
Beans - 50 gms
Cauliflower - 100 grams
Peas - 25 gms
Onion - 1
Red chillies - 3
Coriander seeds - 1 tsp
Cumin seeds- 1 tsp
Tomato puree - 3 tablespoon
Oil - 4 Tablespoons
Salt - as required
Pure Ghee 2 tablespoons
Instructions:
1. Wash and soak the rice in water and keep aside.
2. Make a fine paste of- red chillies, coriander seeds, cumin, ginger and garlic.
3. Slice the Onions
4. Dice all the veges.
5. Take a non stick pan put it on low heat and add Pure Ghee .
6. Add the Soaked Rice in the pan ( NO WATER) and saute the rice , till they start sticking together.
7. Now remove the rice from the pan.
8. Now add Oil in the pan and add the Onions.
9. Stir till the onions are golden brown.
10. Add the paste which you have prepared in step 2.
11. Add all the Vegetables.
12. Add a little water for the vegetables to cook.
13. Add Tomato Puree.
14. Add salt.
15. Add the sauted rice now .
16. Add more water till rice is covered with water .
17. Cover the lid and let it cook for 5 to 7 minites.
18. Serve hot - sprinkle some lime juice and some fresh coriander on top.
Tip: If you wish then you can just cook the rice seperately in water .
Cook the vege seperately as above ( without adding the rice to them)
Take a Deep Oven proff Glass bowl
Add a bed of rice
Add some cooked Veges on top.
Add another bed of rice
Add another bed of Veges
End up with a bed of rice on the top.
Sprinkle the Fresh Coriander on top. And some gravy from the veges.
Put this in the oven for 5 minutes on slow heat before serving.
