Ingredients:
Besan ( Gram Flour ) 125 Grams
Baking Soda or Soda Bi Carb 1/2 teaspoon
Cooking Oil 3 tblspoon
Haldi or Turmeric Powder 1/2 Teaspoon
Red Chilli Powder 1/2 teaspoon
Salt to Taste
Sugar to Taste
Fresh Lemon Juice 2 tablespoon
ginger paste 1 teaspoon
Green Chillies Paste 1 teaspoon
Mustart Seeds 1/2 teaspoon
Green Coriander Chopped 1/2 Cup
Dessicated Cocunut 2 Tablespoons
Water 2 cups
Instructions:
1. Take a mixing bowl and add Besan ( Gram Flour) in it.
2. Now add the Ginger Paste
3. Add the Green Chilli Paste
4. Add Salt
5. Add Lemon Juice
6. Add Salt
7. Add Sugar
8. Add Water - enough water to make a cream like consistency.
10. Take a small fry pan add 2 tablespoons of oil and heat
11. Just add the Soda Bi carb in it and remove from heat.
12. Now add this oil in the Mixing bowl containing the Besan mix.
13. Mix the mixture well and leave still for 20 minutes.
14. Now take a small baking dish and smear it with little oil
15. Pour the mixture in this tray
16. Put this mixture in a suitable steamer and steam for 15 minutes.
17. After cooling down cut into small square pieces.
Seasoning
Heat 1 Tablespoon of oil
Add 1/2 teaspoon of Mustart Seeds and let them crackle.
Add some sugar in it
Add 4 Tablespoons of Water .
Pour this oil mixture on the top of the Dhokla all around.
Serving
Garnish with chopped coriander and/or Coconut
Note: The dhokla should be quite soft, like a sponge cake.
If it is hard that means that you are not using enough baking soda as this will help the dhokla to get air into it to make it fluffy and light.
