Ingredients:
Chana Daal 2 Cups
Urad Daal 1/4 Cup
Ginger paste 1 teaspoon
Hing or Asafoetida one pinch
Sugar 1 teaspoon
Lemons 2
Salt as per taste
Mustard Seeds 1 teaspoon
Green Coriander Choppef finely 1/2 Cup
Curry Leves 4
Oil 1/2 Cup ( as per need)
Baking Soda ( Soda Bi Carb) or Eno 1 pinch
Sugar 1 teaspoon
Green Chillies 2 finely chopped
Instructions:
Soaking
1. Wash and soak the Chana Dal and Urad Dal in a container for 6 hours.
2. Wet Grind the Dals in a sturdy mixer.
3. Add the Ginger paste.
4. Add the finely chopped Green Chillies.
5. Add the Asafoetida.
6. Add the Salt and Sugar.
7. Add the Baking Soda or Eno.
8. Add 2 tablespoons of oil.
9. Just mix the mixture thoroughly and leave it for overnight.
Cooking
1. Add the juice of 2 lemons in it the mixture.
2. Now pour the mixture in a baking tray and steam ( make sure you use a small baking tray or steel plate which can fit in the steaming vessel)
3. Take a big stock pot or pressure cooker and add some water in it
4. Put the baking tray filled with the mixture in the water ( keep the level of the water below it )
5. Steam for 15 minutes and check.
6. To test for the readiness of Dhokla , put a knife in it and it should come out clean.
Garnish
1. Heat 2 tablespoons of oil and add the mustard seeds and curry leave s .
2. Once the mustard seeds start crackling , add some sugar .
3. Add 1/2 cup of water .
4. Pour this liquid all over the Dhokla.
Store it in the fridge and serve with some green coriander on top or /and some grated coconut.
