Ingredients:
Bay leaf - 1
cardamom - 2
Onion - 1 medium sized , finely chopped
tomato puree - 1 tbsp
ginger paste - 1 tsp
garlic paste - 1 tsp
green chillies - 4-6
turmeric powder - a pinch
jeera - a pinch
pepper - a pinch
garam masala - a little more than a pinch
cahewnuts - 1 heaped tbsp and half
malai - 1 cup
coriander leaves to garnish
Cooking oil as required
Unsalted butter - 1 tbsp
Frozen Peas - 1/4 cup
paneer cubes - made from 1 litre milk
Instructions:
Soak the cashewnuts in warm water for 15 mts .(This will make the grinding easier). Grind it with a little of the water that has been used for soaking and keep aside.
Heat oil and ghee. When hot add the bay leaf and cardamoms. Let the flavour be infused in the oil for about a minute.
Add the finely chopped onions along with green chillies. Saute for about 5 minutes . Add the ginger paste 1 minute, add garlic paste and fry till the onions become a nice golden color.
Add the turmeric, jeera and nutmeg. Fry for 2 mts.
Now pour the tomato puree and again fry for 2 minutes. Throw in the cashewnut paste and fry on a med flame till it thickens and the oil starts to separate.Add salt.
Add the peas followed by paneer .
Add the malai and stir frequently till the gravy thickens.
Garnish with coriander leaves.
Serve warm with chapati or naan
