Ingredients:
Poweder Milk 4 cups
Evapored Milk or Condensed Milk 2 Cups
Green Cardamom Powder 1/4 teaspoon
Water 1/2 cup
Oil or Ghee 2 Tablespoons
Sugar 1 cup ( as needed, do not cut back on sugar otherwise the taste will not be good)
Rose Water or Kewra Essence optional

Instructions:
1. Take a Glass bowl and pour the condensed milk.
2. Now add the powdered milk and knead it into a hard dough.
3. You ma add condensed milk or powdered milk as needed to make sure that the dough is very firm.
4. Once the dough is ready then keep it in the freezer for 15 to 20 minutes.
5. After the dough has been in the freezer for some time and has firmed up take it out.
6. Now grate this dough using a very coarse grater.
7. Now take a heavy bottomed pan and put it on medium heat.
8. Add the cooking oil or Ghee.
9. Add the grated dough in it,
10. Add the Green Cardamom Powder.
11. Add sugar.
12. Add some water and cook on low heat.
13. Keep on stirring continuously with a wooden spoon.
14. Once the water dries out the mixture will start to come together and leave the sided of the pan.
15 Add a few dropss of kevera essence(optional) or Rose Essence ( optional)
16. Take out the mixture and set it in a flat dish.


TIPS:

Variants:
COCONUT BURFI :- Do not add water. Add grated coconut according to taste and yellow food color.
PISTA BURFI :- Add chopped pista according to taste and a few drops of green food color.

Once you put the barfi in a flat dish , leave it outside ( in front of a fan) so that any moisture content gets out.
Do not put it into the fridge immediately , otherwise it will not set properly.

I pity you NRIs/ABCDs/BBCDs for using such shoddy recipes for indian sweets. condensed milk and milk powder never make good barfi. or may be you have never tasted a good burfi, so how wud u know.haha
