Ingredients:
Chettinad is a region of TamilNadu state in India, Chettinad cuisine is great tasting an Chettinad chicken is a favourite with many.
A typical Chettinad menu, served on a banana leaf, will also include many mouth-water ing dishes. In Chennai, there are several specialty restaurants that exclusively serve Chettinad cuisine.
Ingredients
1 kg: Chicken ( depending on your choice you can use the boneless breast fillets or thigh fillets)
Onions 4 ( Make a paste)
Tomatoes 4 ( finely diced)
Garlic Paste 1 tablespoon
Ginger paste 2 tablespoons
Haldi ( Turmeric Powder 1 teaspoon
Black Pepper ( Kali Mirch ) 2 teaspoons
Jeera Seeds ( Cumin Seeds ) 2 teaspoons
Coriander Powder 2 tablespoons
Fennel ( Saunf) 1 teaspoon
Red Chilli Powder 1 tablespoon or more ( this dish is normally very chilli)
Laung or Cloves 6
Tamarind paste 1 tablespoon
Salt to taste
5 tsp: Oil
Fresh Coriander leaves 1/2 cup chooped
Green Chilli 2 ( chopped)
Instructions:
1. Wash the chicken and cut to pieces.
2. Grind the Black Pepper, Cumin Seeds and Feeds into a powder.
3. Take a small pan and put it on heat and dry fry this powder lightly and keep aside.
4. Take a heavy bottomed pan and put it on medium heat.
5. Add the oil and season the cloves in this oil.
6, Add onion paste and start to fry it.
7. Once the onions are browned add the diced tomotoes.
8.Sauté well adding minced garlic and ginger.
9. Now add the chicken pieces.
10. Add a little turmeric powder.
11. Cook the chicken pieces for 10 minutes while stirring.
12. Add chilli powder.
13. Add the turmeric paste.
14. Add coriander powder.
15. Add salt and mix well.
16. Pour 4 cups of water and boil.
17. When chicken is half boiled add the dry roasted powder of spices which you prepared in step 3 above.
18. When the gravy thickens to a paste, remove from fire.
Garnish it with fresh coriander and green chillies
Serve it hot with rice, roti or Naan .
