Ingredients:
1. 10 Green Mangoes in small pieces
2. Salt - 100 grams
3. Mustard Oil - 4 Table Spoons
4. Hing - 1/2 Tsp
5 . Haldi( Turmeric Powder) - 1 Tea spoon
5. Kalonjee ( Nigella seeds) - 25Gms
7. Red chilli powder - 2 Tea spoons
8. Saunf (fennel seeds) - 50Gms
9. Saboot Dhania (coriander seeds) - 2 Tea spoons
Instructions:
1. Take the Fennel Seeds ( Saunf ) and put it on a hot fry pan and dry roast it.
2. Similarily dry roast the Coriander Seeds ( Dhania)
3. Once The Coriander Seeds and Fennel Seeds are roasted then grind them.
4. Wash & cut mangoes into small cubles 1/2" cubes.
5. Rub salt and leave them overnight.
6. Let them dry in sun on clean paper towels or cloth for 4-5 hours.
7. Heat Oil. Remove from fire.
8. Add hing & Kalonjee.
5. Add haldi, red chilli powder and freshly roasted & ground Fennel and Coriander seed powder.
6. Mix. Add mangoes and mix well.
7. Store in a clean and dry Glass Jar.
8. Keep the Jar in sun for 4 days.
