Ingredients:
Eggplants (Baingan or Obergeine) 2 Medium sized
Onions 2 sliced in rings
Garlic paste 1 teaspoon
Ginger Paste 1 teaspoon
Turmeric ( Haldi ) 1 teaspoon
Red Chilli Powder 1 teaspoon
Jeera ( Cumin) Powder 1 teaspoon
Black Pepper 10 Nos (Crushed)
Tomatoes 3-4 Nos chopped ( This dish needs lot of tomatoes to get the colour and flavour)
Dry Coriander Powder 1 teaspoon
Fresh Green Coriander chopped ( 1/2 cup)
Peas 1 Cup
Lemon Juice 1 Tablespoon
Amchur ( Dry Mango Powder) 1 teaspoon
Cooking Oil 4 tablespoons ( This dish needs more oil compared to other dishes)
Instructions:
1. Take the EggPlants ( Baingan) and prick holes with a fork.
2. If you have GAS Stove then roast the eggplants on the Flame for about 10 minutes( until they are charred from outside)
Otherwise put them in an Oven for about 45 minutes at 450 Degrees, when you take them out they will look charred from outside but completely cooked from inside.
3, Once the roasted eggplants have cooled down, then peel the skin off and then take the pulp and put it in a blender to make a thick paste.( or if possible mash it using a big fork)
4. Take a heavy bottomed pan and put the oil in it and put it on medium heat.
5. Add the Onions and start fry ing them.
6. Now add the Garlic and stir for 2 minutes.
7. Add the turmeric and chilli powder and stir
8. Add the cumin powder and stir.
9. Add the Black Pepper powder and stir.
10. Now add the peas and cook for 2 minutes while stirring continuously.
11. Add the diced tomatoes now and stir.
12. Add a little bit of salt to help the peas to cook easily.
13. Stir the peas for another 4 minutes now.
14. Now add the eggplant paste which you prepared in step 3.
15. Cook for 2 - 3 minutes and taste it,( the peas and the eggplant should be completely cooked)
16. Add the coriander powder and stir.
17. Add the lime juice and stir.
18. Add the chopped green coriander and serve.
This dish can be served with Naan , Roti or Rice .
TIP: If you use the Tomatoe Puree or the Canned Tomatoes , the colour comes out good. But watch out for excess salt and the preservatives which the Tomatoe Puree might have.
