Can it be used in Indian Cooking ?
Instructions:
Pronounced as Ricotta (pronounced /ri'kot?a/ in Italian)
Ricotta means to ( cook again)
Basically Ricotta cheese is made from the whey ( the water y mixture ) which is left while cheese making ( like mozzarella and other cheeses)
Ricotta is similar in texture to cottage cheese ( Paneer ) though considerably lighter and is a key ingredient in cheesecake, lasagna and many cannolis. Sometimes it can also be used in place of Paneer in Indian dishes like Matar Paneer or Paneer Makhani.
Ricotta is also processed for longer life in three ways: salting, baking and smoking. The pressed, salted and dried variety of the cheese is known as ricotta salata.
A milky-white hard cheese used for grating or shaving, ricotta salata is sold in wheels, decorated by a delicate basket-weave pattern.
Ricota can also be used to make Khoya or Mawa which is an essential ingredient for making Indian Sweets like Barfi.
