Ingredients:
750g or 1 3/4 lb potatoes
2 red onions
6 tablespoons olive oil
100g/4 oz Gruyere cheese
2 tablespoons chopped fresh basil
salt and black pepper


Shopping tip
Gruyere cheese has a lovely strong flavour but can easily be substituted with other cheeses such as crumbles stilton or mature cheddar
Instructions:
1. Peel the potatoes and slice very thinly with a sharp knife.

2. Place them in a bowl and cover with cold water. Allow to stand for about 10 minutes. Drain on paper towel.

3.Peel and slice the onions. Heat the oil in a large frying pan over a medium heat. Add the onions and saute for 2 minutes.

4. Add the potatoes and cook for 15-20 minutes, turning frequentl, until they are tender and golden.

5. Grate the Gruyere cheese. Add the basil to the pan and stir in. Sprinkle the cheese over the top and cook for 2 minutes, without stirring until the cheese melts. Season and serve.


Onions:

Onions have long been regarded as a cure for many ailments. There is evidence that they reduce cholesterol and help to clear heavy cold.

To reduce tears when peeling or slicing onions, chill them for 30 minutes first or cut off the top, but leave the root on. The root contains the largest amount of sulphuric compounds which cause tears when the onion is cut. Remove the root prior to cooking or eating..
