Ingredients:
600 gram fresh rice noodles
2/5 tbsp peanut oil
4 Eggs beatenlightly
300 gram tempeh, chopped finely
1 large brown onion sliced
2 cloves crushed garlic
2 tbsp brown sugar
2 tbsp sweet chilly sauce
1 tbsp tomato sauce
2 cup bean sprouts
100 gram unsalted roasted peanuts (chopped)
1 tbsp fresh chopped coriander
Instructions:
1. Rinse noodles under hot water and drain under cold water.
2. transfer to large bowl and seperate the noodles with fork.
3. Heat 1 tbspoil in a wok and pur in half of the egg.
4. Swirl the wok so that the egg becomes a thin omlette and cook it until set.
5. Remove this omlette from the wok and repeat with the remaining egg.
6. Roll the omlettes tightly and slice them thinnly.
7. Heat half of the remaining oil in the wok again and stir fry the tempeh until browned.
8. Remove fromwok.
9. Heat remaining oil in wok and stir fry onion and garlic till browned.
10. Add noodles, sliced omlette, tempeh,sugar, sauces,sprouts and half of the nuts.
11. Stir fry them until heated thoroughly.
12. Sprinkle remaining nuts and coriander and serve hot.
