Ingredients:
450g potatoes
2 tablespoons sunflower oil
4 spring onions/shallots
225g carrots
100 g greem beans
1 cm in piece fresh ginger
2 cloves garlic
1/2 teaspoons light soy sauce
175g bok choy or fresh spinach
3 tablespoons chopped fresh coriander
1 teaspoon sesame oil
Instructions:
1 Peel and coarsely grate the potatoes. Wash and drain well. heat the sunflowr oil in a wok or fry ing pan over a medium heat.
2.Stir-fry for 10 minutes or until golden. Remove from the pan.
3. Trim and chop spring onions. peel and slice the carrots and halve the beans. peel and grate the ginger. Crush the garlic.
4. Add the vegetables to the pan with chillies, garlic ginger and soy sauce. Stir-fry for 4 minutes.or until the vegetables start to soften.
5. Shred the bok choy. Add it to the pan with coriander. Stir-fry for 2 minutes. Add the potatoes and sesame oil, Cook for 3 minutes, or until heated through. Serve.
Bok Choy:
Bok choy, like other leafy green vegetables is a good source of fibre and iron, essentially for making new blood cells and fighting infections.
