Ingredients:
Single Cream - 2/3cup
Egg Yolks - 2
Corn flour - 1/2tsp
Water - 1tsp
Sliced Mango - 3 or 4 (medium size)
Lemon juice - 1tbs
Heavy Cream - 2/3cup
Instructions:
1. Mix the egg yolks with corn flour and water until smooth.
2. Heat the single cream in a saucepan. Do not allow to boil.
3. Pour it to the egg yolk mixture, stirring all the time.
4. Transfer the mixture to the pan and place it over a very low heat.
5. Stir the mixture continuously until it gets thickens .
6. Pour into a bowl.
7. Puree the mango slices in a blender until smooth and sieve.
8. Mix it with the custard and stir in the lime juice.
9. Whip the double (heavy) cream until soft peaks form.
10. Fold into the mango mixture until thoroughly combined.
11.Transfer the mixture to a freezer proof container.
12. Cover and freeze until half-frozen and still mushy in the centre.
13. Turn the mixture into a bowl and mash well with a fork until smooth.
14. Return to the container, cover and freeze again until firm.
15. Keep the container in the freezer for about 30 minutes.


TIPS: Before serving let the ice-cream soften a bit by taking it out and leaving

You can also sprinkle some rose water or Kewra water drops on top to increase the flavour.
Some chopped nuts on top would also look and taste great.
