Ingredients:
2 eggs
Salt to taste
Butter 2 tbsp
Milk 1 Tbsp
Black Peper a pinch
Sprint Onion - finely chopped
Parmesan Cheese - grated 2 Tablespoons
Instructions:
Break two eggs in a glass bowl.
Add the milk and beat well.
Add Salt, Peper
Add pepper, salt and spring onion
Heat 1 tbsp butter in a pan
When the butter melts pour the egg mixture.
Spread the mixture all around by tilting the pan.
When the omlette start to set sprinkle the grated cheese.
The cheese would start melting soon.
Once the cheese starts to melt fold the omlette with the help of a spatula.
So that the cheese gets sandwitched between the omlette.
Let it cook for a minute or so on both sides.
TIP: If the omlette tends to break then just add 1/2 teaspoon of cornflour dissolved in water in the egg mixture.
If you want a plain omlette and want to make it fluffy then follow this tip:
To make a soft fluffy omlette heat a non-stick pan and add a little more butter than usual. Now beat the egg and stir briskly (even while fry ing) with a fork. This way more air goes in your omlette, making it light and fluffy. Cook till done and serve hot.
The egg shell is covered with a protective coating that aids in maintaining the freshness of the egg by covering the many small holes in the shell, if this mucin layer is removed by washing or buffing, the holes are exposed for bacterial penetration and dehydration, thus hastening deterioration of quality. So don’t wash the eggs for storing.
