Ingredients:
Ingredients for making Karhi
250 grams yoghurt ( Sour, if the yoghurt is left in the fridge for few days 4-5 days it tends to get sour)
Besan 6 tablespoons
1 small onion chopped
1 tsp. salt
½ tsp Red Chilli Powder
½ tsp turmeric (Haldi) powder
6-8 curry leave s (Karhi Patta)
¼ tsp mustard seeds (Rai)
¼ tsp carom seeds (Ajwain)
1 tsp. cumin seeds (Jeera)
1 pinch asafetida (Heeng)
Garam Masala 1 tablespoon
Ingredients for making Pakoraye
6 tbs. besan
½ tsp. salt
¼ tsp chili (Lal Mirch) powder
2-3 chopped green chilies
¼ tsp. cumin seeds (Jeera)
½ tsp. Baking powder OR 1 pinch of soda bi carbonate
1 pinch asafetida (Heeng)
1 small onion-chopped
Instructions:
PAKORAY:
1. Take the Besan in a mixing bowl and add all the ingredients as listed above for Pakoraye.
2. Add some water to make a thick batter out of it.
3. Heat oil in a deep pan for deep fry ing and fry this batter in small balls to make PaKoray.
4. Keep aside on a plate lined with some kitchen towels.
Karhi:
1. Whip the yogurt into a smooth paste.
2. Add Besan , salt, pepper, Turmeric (Haldi) and chopped onion and mix well.
3. Add 3-4 glasses of water and leave to cook partially covered on low heat.
4. When the onion has softened and the curry has attained the desired consistency add Pakoraye.
Finally :
1. Take a small fry pan and put 2 tablespoons of oil and heat.
2. Add the curry leave s, Rai, Ajwain , Jeera seeds and heat them.
3. Add the Garam Masala and fry it for a minute or so
3. Add this oil on top of the karhi and mix well.
4. Taste it to see if salt is ok.
Serve it with Naan , Rice or Roti
TIP:
Take the Karhi in the serving dish.
Heat two tablespoon of oil or Desi Ghee and add 1/2 teaspoon of Red Chilli Powder so that the oil turn reddish.
Add this oil evenly on top of the Karhi. This will increase its flavoury a lot.
