Ingredients:
1/4 cup diced french beans
1/2 cup boiled and mashed potato
1/4 cup peas
1/4 carrot very thinly diced
2 Medium Sized Potatoes
1 tblspoon Jeera (Cumin Seeds) ( Roast the seeds in a fry pan without oil till they go bit dark)
1/2 Cup Corn Flour
Salt to taste
Black Pepper 1 pinch
Red Chilli Powder 1/2 teaspoon
Amchur ( Dried Mango Powder ) 1/2 teaspoon
Dried Coriander Powder 1 Teaspoon
Fresh Coriander 1/2 cup chopped
Cooking Oil - half cup
Instructions:
This is a simpe but nutritious recipe as it contains many vegetables and kids would like it.
1. Boil the Potatoes ( or you can microwave them) and peel them when cooled
2. Microwave all the vegetables for 5 minutes ( or steam them for 7 minutes)
3. Now take a glass bowl and add the potatoes and mash them.
4. Now add all the veges and mash them thoroughly.
5. Now add the red chilli, roasted cumin, black pepper, salt, Amchur, coriander powder, fresh coriander, and mix well.
6. Now make small cutlet shapes , rounded petties.
7. Roll these patties in the cornflour on all sides.
8. Shallow fry them on both sides.
9. Serve with tomatoe ketchup or chilli sauce.
Notes: If you wish you can use an egg and mix the cornflour in the egg and then dip the petties in this mixture and keep in the fridge for half an hour and then shallow fry them, the cutlets would be very crispy.
If your mixture is bit crumbly then you can add some cornflour in the mashed potatoes and this will you will get more binding.
Try using different vegetables each time. You can also add some Dal ( the yellow split peas - Just boil them for 5 minutes or just microwave them for 5 minutes in a cup of water )
If you have some friends coming over for dinner and you want to serve the Tikkis as a starter and you can prepared the tikkis earlier and then keep them in the grill to keep them hot ( they would also become more crispy)
